There is a lot to learn, but It is possible - so much depends on the dentist and the staff in the office. If the dentist is a good teacher and you'll have support from others in the office - even people to try things out on - e.g. x-rays, impressions, intra-oral camera... you have a decent chance.
If you can, look for an office with at least one other assistant to take you on as an "apprentice". It's great to have a resource when you need a little extra help. Be prepared to study a bit at home, too.
